Choose by the task: a blender breaks down ingredients for drinks, soups, and sauces; a mixer uses a whisk, beaters, or a dough tool for the jobs its manual permits. A hand blender is a blending format, not the same appliance as a hand mixer with beaters.

Why a blender is not automatically a dough mixer
A fast blade and a dough hook work differently. Some multi-function systems include a separate bowl or tool approved for dough, but that does not make every blender jar suitable for kneading. Conversely, a mixer with beaters does not automatically support bread dough because the box says “mixer.” Check the exact tool and batch limit.

Handheld or countertop?
A hand blender needs you to hold it and guide the head. A jug blender contains the mixture in a dedicated vessel, but still needs correct assembly, loading, and supervision. A stand mixer leaves the bowl supported on a base; a hand mixer requires you to hold the tool. Consider grip, filled-bowl weight, countertop space, and how many parts you will wash.
For soup, follow the hand blender’s permitted temperature and immersion level, and the instructions about removing the pot from heat. Do not infer hot-liquid permission from a metal shaft or glass jug. Sealed personal cups are a different system and must not be used for hot liquids where prohibited.
